Tour Itinerary:

Day 1: Monday, April 9, 2018: DEPARTURE

• We depart the United States on our overnight flight to Israel.

Day 2: Tuesday, April 10, 2018: WELCOME TO ISRAEL!

• We arrive at Ben Gurion Airport this afternoon and are met by an Ayelet Tours representative.
• We transfer to Jerusalem. Upon arrival, we stop atop the Haas Promenade to recite a special “Shehecheyanu!” blessing as we look out over the City of Gold for the first time.
• Check into our hotel and have time to refresh.
• Enjoy a welcome dinner together this evening.

Day 3: Wednesday, April 11, 2018: SUSTAINING THE PLANET, SUSTAINING THE JEWISH PEOPLE

• Breakfast at our hotel.
• This morning we visit a Jerusalem hummus factory to learn how one of Israel's favorite foods is made and taste their delicious creation.
• We drive to the outskirts of Jerusalem, to the beginning of the Jerusalem hills, for a tour of Kaima. Kaima is an organic farm that employs youth-at-risk and teaches them organic farming, marketing, and other skills necessary to sustain organic agriculture. Meet some of the youth and the visionaries who created this project.
• Continue to Tzora Vineyards in the Jerusalem Hills for a firsthand look and taste of the fabulous wines returning Jerusalem to the “wine stature” of Biblical days. Meet Eran Pick MW (Master of Wine), the only holder of this prestigious French degree in the state of Israel.
• This afternoon, we join Chef Moshe Basson, the head Chef of Jerusalem's famous Eucalyptus Restaurant, in a foraging workshop in the Judean Hills. Chef Basson leads the group in picking herbs, vegetables, and other items and he then conducts a cooking workshop focusing on what was picked and their place in the eco/human system of the land of Israel, over thousands of years.
• Early Dinner with Chef Basson and your creations.
• Tonight begins Yom HaShoah, Holocaust Remembrance Day.

Day 4: Thursday, April 12, 2018: THE OLD CITY (YOM HASHOAH)

• Breakfast at our hotel.
• Today, our tour begins at Ir David (City of David), just outside the Old City walls, where we wander through the carefully preserved archaeological excavations dating back to the time of King David.
• At 10 am, the sirens sound for Yom HaShoah, Holocaust Remembrance Day. We observe a minute of silence in memory of those who lost their lives during the Holocaust.
• We continue with a tour of the Western Wall tunnels, discovering the archaeological wonders that once remained untouched for centuries.
• We enjoy an Old City walking tour, where we visit the Jewish Quarter, Arab market (shuk) and the Christian Quarter, as we walk along the Via Dolorosa and ending at the Church of the Holy Sepulchre.
• Spend the rest of the day at leisure exploring Jerusalem and enjoying dinner on own this evening.
• Later this evening, we walk to the Tower of David, where we enjoy the spectacular Sound & Light show tracing 3,000 years of Jerusalem's history.

Day 5: Friday, April 13, 2018: NEW JERUSALEM

• Breakfast at our hotel.
• Our day begins with a visit to Yad Vashem, Israel's memorial to the Holocaust, including the Historical Museum for first time visitors and the Holocaust Art Museum and archives for return visitors.
• We continue with a visit to the Herzl Museum, where we learn about the life and work of the great Zionist visionary, then stroll over to Mt. Herzl, Jerusalem's military cemetery to pay our respects at the gravesites of Theodore Herzl, Golda Meir, Yitzhak Rabin, and Shimon Peres. Hear stories of Israel's path to foundation from our guide.
• Visit Machane Yehuda, Jerusalem's outdoor marketplace, filled with foods of every variety. Together we will take part in the “shuk bites” program, allowing us to enjoy a varied taste of the marketplace in a fun and new way.
• As the sun begins to set, we participate in Kabbalat Shabbat together with the people of Jerusalem at the Western Wall, followed by Shabbat dinner together at our hotel.

Day 6: Saturday, April 14, 2018: IT'S ALL HAPPENING IN THE DESERT

• Breakfast at our hotel.
• Early this morning, we depart for the Dead Sea basin, the lowest point on Earth.
• Upon arrival, we ride the cable car to the top of Masada, where we explore this historical site and consider the multiple meanings of Masada to Jews in the United States and Israel. We see the remains of King Herod's fortress and learn about the Jewish Zealots' last standing against the Roman forces.
• We descend the mountain and head to the beach to enjoy lunch and an “unsinkable” swim in the healing, salty waters of the Dead Sea.
• We listen to a lecture called “The Shrinking Dead Sea and Efforts to Find a Sustainable Solution for the Future” by geologist Eli Raz of Kibbutz Ein Gedi (time permitting).
• Return to Jerusalem for an evening at leisure and dinner on own.

Day 7: Sunday, April 15, 2018: RE-IMAGINING THE DESERT

• Early breakfast and check out of our hotel.
• We depart Jerusalem and travel south to Sde Boker for a tour of Ben Gurion's tzrif (hut) and have a chance to pay respects to David and Paula Ben Gurion at their gravesites located here. We hear some of the stories of how David Ben Gurion pushed a nation to embrace his vision for the Negev and the dreams for the desert that he planted in the minds of young Israelis.
• Visit Carmey Avdat, built on the remains of an ancient farm, for a guided interactive visit with founders and owners, Eyal and Hanna Izrael. See how they grow their grapes in Biblical style, taste their wines and hear their stories on the backdrop of the Biblical stories from the book of Genesis.
• Dr. Shmuel Brenner, Director of the Arava Center for Sustainable Development, speaks on the subject, “What We Are Learning About Sustainability and What We Are Teaching.”
• Travel south for a mini-conference on sustainability issues in Israel to be held at both Kibbutz Lotan (The Center for Creative Ecology) and Kibbutz Ketura (The Arava Center for Sustainable Development). Only a six minute drive separates these two major institutions leading the way to sustainability thoughts and practice in Israel.
• We check in to Kibbutz Lotan and enjoy dinner together this evening.

Day 8: Monday, April 16, 2018: LOTAN

• Early breakfast and check out of our kibbutz.
• This morning, we travel along the Mediterranean coast to Yokne'am located in the lower Galilee, for a program (arranged on own).
• We continue to our kibbutz in the Galilee to check in and spend the afternoon relaxing.
• Dinner at our kibbutz together this evening.

Day 9: Tuesday, April 17, 2018: MYSTICS AND MANNA

• Breakfast at our kibbutz.
• We start our day at the Palestinian village of Ujah, and meet the Israelis and Palestinians involved with Eco Peace Middle East, an organization which transcends political borders to address sustainability issues between Israel, Jordan and the Palestinian Authority.
• Drive to Safed and explore the ancient mystical city with its narrow cobblestone streets, ancient synagogues, and artist's colony. Meet with Kabbalistic artist Avraham Lowenthal.
• We return to our kibbutz for dinner
• This evening, we join kibbutz members for melancholy songs and poetry, marking the somber start of Yom Hazikaron.

Day 10: Wednesday, April 18, 2018: AVODAH: CULTIVATING THE LAND, CULTIVATING THE SPIRIT (YOM HAZIKARON)

• Breakfast and check out of our kibbutz.
• Today, we take a reflective nature walk in the Banias Nature Reserve along the new hanging bridge over the Banias Canyon.
• We ascend to Har Bental in the Golan Heights for a view into Syria and an understanding of the delicate geo-political situation on the Israeli-Syria border.
• At 11:00AM this morning, a siren sounds and we pause with all the people of Israel for a moment of silence marking Yom Hazikaron, Israel's Memorial Day.
• We share lunch in a Druze Village, including home hospitality and the opportunity to learn about their unique culture. We also learn about the many Druze people who sacrificed their lives by fighting in the IDF for Israel's independence.
• Try your hand at chocolate making and learn from the experts at the DeKarina Chocolate Factory at Ein Zivan.
• Continue to our hotel in Tel Aviv for check in, noticing the change in the mood of the country, as Yom Hazikaron ends and Yom Haatzmaut, Israeli Independence Day, begins. We celebrate with the people of Israel in the streets of Tel Aviv.

Day 11: Thursday, April 19, 2018: TEL AVIV

• Breakfast at our hotel.
• Around 10am, we watch as the Israeli Air Force performs a special fly-over and show that passes over Tel Aviv and much of the country, marking the celebration of Yom Haatzmaut.
• We take a guided walk through the neighborhood of Neve Tzedek, one of the first built outside of Jaffa in the late 1800's, with its stories of founders and dreamers and contemporary Israeli creativity.
• Continue to Rothschild Blvd., where Tel Aviv began, for a walk through the UNESCO Heritage White City collection of Bauhaus buildings, concluding at Independence Hall.
• Free time for last minute shopping.
• This evening, we enjoy a festive farewell dinner, as we remember all that we have experienced together.
• We transfer to Ben Gurion Airport for our overnight flight back to the United States.

Day 12, Friday, April 20, 2018: WELCOME HOME!

• We arrive home this morning.
